Ho preso dei peperoni verdi di varietà corno di toro, ho tolto il picciolo, li ho tagliati a falde per il lungo, lavati per bene e tagliati a listine.
Ho rosolato per qualche minuto i peperoni in poco olio nel wok, poi li ho scolati e messi da parte.
Nell’olio rimasto ho stemperato 2 cucchiaini di yellow curry paste, ho aggiunto una lattina di latte di cocco kathay e ho fatto bollire piano.
Poi ho salato, ho aggiunto i peperoni e del pollo fatto a fettine e poi a strisce. Ho lasciato bollire il tutto, giusto per il tempo di far cuocere il pollo.
Nel frattempo ho usato la mia meravigliosa palla da the gigante per cuocere il riso basmati.
Il risultato è stato decisamente buono!

Sì, è molto buono, la pasta di curry gialla credo diventerà la mia preferita: mi aromatica e meno piccante di quella rossa e verde, mi sembra più equilibrata. Ho finito il latte di cocco, altrimenti avrei provato la versione zucchine+gamberi. Sigh.
