Sabato 16 aprile 2011 dalle 10:00 alle 13:00 si terrà il laboratorio Fare il pane in casa con il lievito naturale, organizzato da Slow Food Bracciano presso la cantina “Quelli del Venerdì”, a Bracciano in Via dell’Arazzaria 63.

Programma:

  • Introduzione al lievito naturale: cos’è, come si ottiene e si mantiene (c.d. rinfresco)
  • Dimostrazione ed esercitazione pratica di “rinfresco”
  • L’impasto e l’importanza degli ingredienti
  • Dimostrazione ed esercitazione pratica di impasto
  • Le pieghe nell’impasto. La lievitazione, la cottura. Importanza dei tagli e del vapore
  • Dimostrazione ed esercitazione pratica di pieghe e formatura panini
  • Degustazione di pane e grissini preparati con la metodologia applicata nel corso

Al termine del corso i partecipanti riceveranno un attestato di partecipazione e potranno portare via con sé un barattolo con il lievito  madre preparato durante il corso, nonché i pani prodotti che potranno essere cotti in autonomia a casa.

Quota di partecipazione: per i soci Slow Food 20 euro; per i non soci 30 euro.

Il corso si terrà se si raggiungeranno minimo 10 iscrizioni.
Al massimo saranno ammessi 14 partecipanti.

Non occorre portare altro che il proprio grembiule.

Le farine verranno gentilmente offerte da Alce Nero.
