Devo ammetterlo, quella farina ai 7 cereali per pane nero della Spadoni ammiccava dallo scaffale da un po’. Così, appena mi sono ripresa dalla prima edizione del corso “Fare il pane in casa con il lievito naturale“, ho provato a usarla.
Il risultato è stato eccezionale! Un bel pane nero, con una bella crosta croccante, e quei semini che fanno crunch sotto i denti… e la mollica soffice e ben areata! Credo proprio che diventerà uno dei miei pani preferiti!
Ho usato:
– 500g di farina ai 7 cereali per pane nero Spadoni
– 300g di acqua
– 200g di lievito madre
– Farina zero qb
– Olio evo qb
Nota: non ho usato le bustine di lievito di birra secco fornite con la farina.
Contravvenendo a quel detto che dice che di venere e di marte non si fanno tante cose (mai capito, ma se volete farvi due risate potete leggere qui), io di martedi e venerdi rinfresco sempre e rigorosamente il mio lievito madre.
Martedi scorso dopo il rinfresco (ore 15) ho preso una parte del lievito, circa 200g (purtroppo non l’ho pesato), l’ho sciolto con l’acqua, ho aggiunto qualche cucchiaio d’olio e la farina Spadoni e ho lavorato bene l’impasto con il mio fido Kenwood.
Ci è voluto qualche cucchiaio di farina zero per arrivare alla giusta consistenza, poi ho rotolato l’impasto in una ciotola unta d’olio e l’ho lasciato lievitare a temperatura ambiente, finché non è circa triplicato. Normalmente la prima fase di lievitazione la faccio fare in frigorifero, ma volevo essere sicura che andasse tutto bene. Dopo qualche ora (ore 23) l’impasto era decisamente allegrotto:
A questo punto ho rimaneggiato per bene l’impasto e gli ho dato una forma di salamotto, senza fare pieghe ma tenendo degli ostacoli tutto attorno in modo che non si allargasse troppo:
Me ne sono andata a ninna e ho puntato la sveglia per le 6:45, ora in cui mi sveglio se voglio panificare in tariffa Enel ridotta durante la settimana :). Ho scaldato ben bene il forno alla massima temperatura possibile (e ventilazione inserita) con dentro già una teglia e un pentolino con 2 dita d’acqua. L’impasto era lievitato in maniera vergognosa:
Ho trasferito il pane nella teglia già nel forno aiutandomi con la carta forno, non ho fatto tagli perché la superficie si era già “stracciata” e sapevo che il pane non sarebbe cresciuto molto di più in cottura. Ho cotto 15 minuti alla massima temperatura, poi altri 20 minuti a 200 gradi (senza ventilazione), infine altri 20 minuti sempre a 200 gradi ma senza il pentolino dell’acqua, così la crosta ha avuto modo di formarsi per bene:
Ottimo risultato. Proprio oggi (che guarda caso è venerdi!) ho impastato di nuovo questo pane ma l’ho messo a lievitare in frigorifero. Ce lo lascerò fino a sabato sera/notte, quando lo metterò in forma per poterlo cuocere domenica mattina. Con il riposo in frigorifero l’impasto svilupperà profumi diversi, sono curiosa di capire quale mi piacerà di più. Sospetto entrambi… 😉

ho usato anche io questa miscela spadoni ed è ottima. Ho un solo problema con la macchina del pane…appena si accende mi si affloscia l’impasto. Ci ho pensato e in effetti il pane si infila in un forno ben caldo…invece la macchina del pane si riscalda piano piano e ogni volta l’impasto fa ploff 🙁
