Pasta con melanzane e pomodori secchi

Pasta con melanzane
Ingredienti per 2:
2 melanzane nere lunghe, 2 pomodori secchi sott’olio (quindi 4 metà), poco olio evo, 1 spicchio d’aglio, 1 peperoncino (facoltativo).
Lavo le melanzane, tolgo il picciolo, le taglio a dadini piccoli e le metto a spurgare in un colapasta, cosparse di sale. Poi sciacquo per bene e lascio scolare un po’.
In una capiente padella (dove salterò la pasta), metto a rosolare l’aglio e il peperoncino nell’olio. Aggiungo i dadini di melanzana e salo leggermente, poi aggiungo i pomodori secchi, scolati del loro olio e tagliati a listerelle. Lascio sul fuoco il tempo di necessario a far cuocere le melanzane, ma senza farle spappolare.
Nel frattempo avrò messo a cuocere la pasta (noi ne mangiamo 250g in due); quando è cotta, la scolo e la salto brevemente nella padella. Volendo, sopra ci sta bene del pecorino o (ma noi non l’avevamo) della ricotta salata grattugiata.
