Quest’anno l’orto non ha prodotto zucche, nonostante i semini regalati da Sandra aka Un Tocco di Zenzero. Però quelle della vicina sono state rigogliosissime, al punto che due si sono ritrovare a crescere nel mio orto 🙂
Ed ecco fiorire una serie di ricette che hanno visto protagoniste le due zucche in questione.
Tanto tempo fa postai questa ricetta in it.hobby.cucina chiamandola clafoutis di zucca. In realtà il clafoutis di solito è una preparazione molto differente, per cui rinominerò la ricetta torta alla crema di zucca, che mi sembra più appropriata.
Preparare una frolla con 200g di farina, 100g di burro, 1 tuorlo, 1 cucchiaino colmo di zucchero di canna, 1 cucchiaino raso di cannella in polvere, 1 pizzico di sale. Fare la palla e lasciar riposare in frigo almeno una mezz’ora.
Nel frattempo pulire 400g di zucca privandola dei semi e della buccia, tagliarla a pezzetti e cuocerla in 1 bicchiere di latte (o acqua) con 2 cucchiai di miele.
Stendere la frolla in una tortiera da 22cm di diametro rivestita di carta forno. Ricoprire il fondo e le pareti dello stampo, poi coprire il tutto con un secondo foglio di carta forno e riempire con fagioil secchi. Cuocere il guscio in forno già caldo a 200 gradi per circa 10 minuti.
Nel frattempo scolare la zucca dal latte e frullarla. Sbattere 2 uova con 50g di zucchero di canna, 20 grammi di fecola, 100g di panna. Unire la polpa di zucca.
Quando il guscio è cotto togliere i fagioli, versare la crema di zucca, decorare con 1 cucchiaio di mandorle ridotte in lamelle e rimettere in forno a cuocere finché la crema non sarà rassodata. Ci vorranno almeno 20 minuti.
Io stavolta ho preferito mettere alcuni pinoli dopo la cottura, infilzati nella crema.
