Con questa ricetta partecipo al Contest delle Fattorie Fiandino, sezione dolci, con un po’ di fiatone visto che domani oggi è il termine ultimo per postare le ricette. Si avverte l’affanno? PANT PANT!
Le lingue di gatto sono una ricetta davvero semplice ma che mi ha intimorita per molto tempo. In particolare tutti i dolci che prevedevano il burro mescolato a crema… poi ho scoperto che basta avere del burro buono e un robot con le fruste, e il gioco è fatto 🙂
Le dosi auree, che so a memoria come poche altre ricette, sono:
– 100g di burro
– 100g di zucchero
– 50g di albume d’uovo
– 125g di farina
Normalmente faccio le lingue di gatto quando ho in avanzo qualche albume, per esempio dopo una crostata. Misuro il peso degli albumi e regolo di conseguenza le altre dosi.
Il procedimento è così semplice che mi vergogno quasi a postare la ricetta… non so se l’amica Sandra vorrà prendere in considerazione questa ricetta, ma io comunque la volevo postare perché mi rendo conto di non averne mai parlato.
Innanzitutto si tira fuori dal frigo con un certo anticipo il burro… se -come succede a me il 99% delle volte- non vi ricordate questo piiiiccolo accorgimento, può venire in aiuto San Microonde che, in pochissimi minuti alla potenza minuma, ve lo tramuta in pomata.
Con Santa Spatola Siliconata riuscirete a depositare il burro nel contenitore di San Robot senza lasciarne il 20% in giro. Aggiungete lo zucchero e fare sbattere per qualche minuto alla massima potenza.
Aggiungete le chiare e, sempre alla massima potenza, fate sbattere per qualche minuto.
Adesso viene il difficile: fermate San Robot, buttate dentro tutta la farina, azionate San Robot per pochi secondi alla minima potenza, il tempo di incorporare la farina. FI-NI-TO!
Santa Spatola Siliconata vi aiuterà a trasferire il composto burroso dentro Santa Siringa Per Dolci, con la quale formerete dei cilindretti cicciotti su delle teglie imburrate. Tenete i cilindretti un po’ distanziati, perché con il calore l’impasto diventerà liquido e si allargherà parecchio.
